MUFFINS - FAST AND YUMMY  Rita DeBry

 

2 heaping cups Raisin Bran (or any other bran flakes)

2 cups flour                                          ½ cup sour cream or yogurt

1 cup chocolate chips                            ½ cup fruit juice or milk

1 cup chopped nuts                               (I often use a small can of pineapple juice)

½ cup white sugar                                 ½ cup oil

1 tsp. baking soda                                  3 eggs

1 tsp. baking powder                             2 mashed bananas or 1 cup mashed fruit

½ tsp salt                                             (I buy bananas on sale, peel, and freeze them)

 

Just dump everything into a large bowl in the order listed (dry ingredients first).  Beat with mixer until well blended.  Spray 2 muffin tins (makes 24 muffins) with Pam and fill with ¼ cup batter.  Bake at 350 degrees for 15 to 20 minutes. Just until lightly browned.  I freeze them and put them in our lunches.  I can start these and have them in the oven in 10 minutes!  As you can tell, there can be a lot of variations of this recipe.
