Fresh Strawberry Pie    Rita DeBry

 

1 package of frozen strawberries, thaw and puree in a blender with ˝ cup water

Pour into a saucepan

Add 1 cup sugar and 4 Tblsp. corn starch that have been sifted together

Cook and stir constantly until thick, add 2 Tblsp. butter and stir

(if this is too sweet for you add a 1 Tblsp. of lemon juice)

Cool slightly in frig, stirring often so it doesn’t form a film

 

1 quart fresh strawberries, hulled, washed, and cut into quarters

Arrange in a baked piecrust.

Pour strawberry glaze over berries in piecrust and cool until firm.

Serve with REAL whipped cream.
