DIANE’S QUICK FRENCH BREAD    Bonnie Norman

 

2 tablespoons dry yeast

1 tablespoon sugar

½ cup warm water

2 cups hot water

2 tablespoons sugar

1 tablespoon salt

1/3 cup oil

3 cups flour

3 more cups flour

Butter

 

Dissolve dry yeast and 1 Tbsp sugar in warm water. In a large bowl, mix hot water, 2 Tbsp sugar, salt, oil

and flour.  Stir in yeast mixture and add 3 more cups flour.

Mix until large ball.

Rest 10 minutes; mix down with spoon, rest 10 minutes

Repeat 5 times.

Divide into 3 or 4 loaves – width of cookie sheet

Roll into oblong (9x9) roll, put seam on bottom.

Raise 30 minutes.  Before baking, slash with sharp knife.

Bake at 375º for 30 minutes – ‘til lightly brown.

Brush tops with butter.
