Carol's Jelly Roll Carol Orr
5 eggs
1 cup sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
Dash of salt
1 large package lemon pie
filling, cooked according to pkg. directions and cooled
Beat eggs until foamy and
lemon colored. Gradually add sugar, then
vanilla.
Mix together the flour,
baking powder and salt. Fold or mix in
the dry ingredients. Pour into a greased
10 x 15 inch pan. Bake at 400 degrees for 13 minutes. Cut off the outside
edges while in pan. (Let husband eat
that!)
Turn out onto a cloth dusted
with icing sugar. Immediately spread cooled lemon pie filling over the cake.
Starting with narrow end, lightly roll the cake using the towel to help. Place on serving platter placing seam side
down. Allow to cool.
