CRANBERRY CHUTNEY      Kathy Virgin

 

1 cup water *

1 cup granulated sugar

1 pkg. Cranberries (12 oz.)

1 cup peeled chopped apple

1/3 cup cider vinegar

1/3 cup raisins, light

1/2 tsp. Cinnamon

1/4 tsp. Ginger

1/4 tsp. Allspice

1/8 tsp. Cloves

 

           1.  In medium saucepan combine water and sugar; bring to boil over medium heat.  Add cranberries, apple, vinegar, raisins and spices.  Bring to boil, then simmer gently 10 minutes, stirring often. 

 Cool to room temperature and serve, or cover and refrigerate then bring to room temperature before serving.

 

*you may substitute orange juice or other fruit juices for all or part of the water when making this or regular whole cranberry sauce for a rich and distinctive flavor.

 

Note: If it is not cranberry season, you can substitute 1 can of whole cranberry sauce (Ocean Spray) for the water, cranberries and sugar.  Add the remaining ingredients and let the sauce simmer on medium heat until the apples are soft. (About 10 minutes stirring often.)
